I bought a box of gingerbread mix last x'mas 2009. Its still sitting on my kitchen counter, pretty lonely, staring at me. I left it there cuz I never liked baking mixes, apart from Bisquick which I like making those thick pancakes with. I thought most mixes taste bland if you didn't tweak the taste in the pack.I will try baking the gingerbread man without tweaking it. See how it tastes...
Ingredients needed to make Gingerbread Man :
3/4 cup softened butter
1 Large egg
1/3 cup hot water and
Bag of mix
Stir the mix with the softened butter until crumbs form. Add the egg and hot water. Knead until the dough is cohesive, sift and a bit sticky. Divide in half, wrap in clingfilm then refridgerate for 1 hour (or up to 3 days).
To bake, preheat the oven to 350. Roll out the dough to about 1/4" thick, use gingerbread man cutter to cut out shapes. Transfer shaped dough to lightly greased or parchment lined baking tray.
I prefer the parchment lined baking tray to just greasing your baking tray cuz I used to want to cry after every baking session cuz the cookies and cakes etc.... just stuck to the edges. Its quite tricky to wash them and unless you want an emotional breakdown, u should use the parchment lined baking try.
Bake cookies for 12-14 mins; they'll be slightly soft when done. Cool on the pan for 5 mins, then transfer to a rack to finish cooling.

Then I decorated the gingerbread man with eyes and hearts as his shirt buttons and icing for his smile. And tried one.
I thought it needed more ginger and a tad bit of cinammon to bring out the taste and smell of the ginger.... but it was good enough. Crunchy and decorated. Nice gift idea.
