    Final pics of any more of my apple pies. I promise.
     
    For now, indulge me by admiring the fine crust I created. A perfect crust - flaky but not crumbly on the top, "sturdy" but not overly-doughy on the bottom.

    I figured out my error on the first homemade crust.
    Something to do with the quantity of water.

    I made only one modification to the filling. I started them off with using a spiffy apple corer/slicer. For best results with one of these gizmos, you should position the device at the right spot and firmly press it into the fruit before actually slicing it through. Kinda like a 2-step process. My apple slices were cut into small pieces before softening in a pot.


    Ideally, it would be wooonderful to be able to recreate the apple pies that were sold at a place that used to be known as Sun Wah Kue on Washington Street in SF's Chinatown. The crust was soft, thin and just the right texture. The filling was a tiny bit tart, not too sweet and I recall the apples cut into tiny pieces. $6 of such goodness. Such a shame the shop no longer exists.



    My in-laws had a taste of the pie pictured above. They don't usually comment on my baking, only offering a rather dull 'ho sik" ("tastes good") when prodded. This latest project was a crowd-pleaser.

    You know my family LOVES apple pie!!! ^^ My mum sometimes used to make it along with some fantastic custard to go with it all! I also like apple crumble too (I used to make it at school would you believe!).

    To get a really good apple pie, you should also try to see if you can get bramley apples. These are British apples which are known for their best use in cooking. They taste much sweeter than Granny Smiths for sure. You need to cook/soften them first beforehand before putting it into the pie for baking. ^^

    It looks, er looked!, like it was absolutely wonderful!  And even the in-laws begrudgingly agreed...now, as they say, "That takes the cake!"  Oh, dessert humor!  haha!

    It might be good to invest in some apple peelers if you are going to continue to make apple pies, that would speed things up.  How many apples do you need to use for one apple pie?  
    I like the idea of the heart cookie cutter though, very good!

    i LOVE apple pies. if i were in san fran, i probably would've bought 'em at sun wah kue too. what happened? why did they close down?
