Who doesn't like looking at food....or eating? Here's a home-cooking project brought on by my dissatisfaction with a certain apple pie that was too sweet and my subsequent research into how apple pies are made in a home kitchen.

I must have a thing for apples. My kitchen used to smell of tarte tartin pretty often.  On my first attempt at the apple pie, I used Fuji apples, Pillsbury refrigerated pie crusts and instructions from an easy recipe at Better Homes and Gardens. I replaced white sugar with brown sugar and reduced the quantity called for. The result was the top crust came out too brown and the baked apples harder than I would have liked. A little more tartness would have been better too.

Now that I got a feel for this apple pie thing, I dove into my second attempt. To increase the tartness I used both Granny Smith and Fuji type apples. To ensure the filling is to my liking, I partially cooked the apples in a pot before pouring into the pan. Finally, to prevent an overdone top crust, I cover the whole top - not just the edges - with foil.

Unfortunately, or fortunately, my store was out of Pillsbury crusts so I prepared a pie crust from scratch. The store-bought crust actually has a certain taste to it so I may go homemade from now on.

For some reason I had this notion baking apple pies was much more laborious than it actually was. It turns out it's not that complicated, which isn't to say it doesn't still require a little time to put it all together.

I thought I messed up this 2nd attempt as the pie seemed to be an apple crumb pie - the crust was falling apart. However, the next morning I realized if I had let the pie to cool completely, even chilled it in the fridge, a pie slice would've had the desired structure. The day before I had been too impatient to eat the thing without letting it sufficiently cool. haha.

Peachey's apple pie with sliver of vanilla ice cream. Breakfast.
The pie felt like it weighed about 3 pounds in the pan.

The flavor and texture of the apple filling was very good. I might have found a good combo with the apples. The crust, otoh, could use some improvement.

    Back to the cutting board.

Thanks to MissScarlett for the baking advice.

I think those hand-cranked apple peeler machines are neat-o.  I always thought that would be a hit with the kids.

Do you have just a corer? Thinging that punches the core out of your apples? I bought one last season (apple season) at one of the orchards. If nothing else, it made peeling go faster cuz you're not working around the sticky-outy parts. It's manual and simple, but made apple prep go faster. Girl-child was coring and peeling. Then I cut them up. I have the exact same problem with those corer/slicer gizmos.
