Hey Guys,
I know im over due but better late than never true!
, I've been working hella lot! 
and about to start my annual travels and visit all of my watering holes around Asia. So I've been playing with some chemicals and applying them to my work "making delicious cocktails" 
and here is some of the stuff I've been working on..... Hong Kong Restaurant and Bar Show

Hey Guys,I have never blogged about my industry friends so im just gonna spit it out!!
I just wanted to give a shout out to my good friend and fellow barmen Matt R. Matt has been in Crown in Macau for the past year mixing up a storm specializing "molecular mixology" where he incorporates gastronomy techniques into mixing drinks. He's work has been featured in Tattler Macau How cool is that!
Matt winning a cocktail competition the wining drink was
"Anejo Sunshine when she’s gone"
combined Havana Club Anejo Reserva rum with pineapple and mango marmalade and Crème De Gingembre, along with muddled ginger and pineapple, all shaken and double strained into an old fashioned glass over crushed ice.

Signora Della Notté
“Lady of the Night”
Glass: Martini
Garnish: Red Grapes
45ml Glenfiddich 15yr Solera
30ml Sangria Rouge
30ml Fresh lemon juice
15ml Demerrera syrup
2 Dash Angostura Bitters
15ml Fresh Egg White
5ml Tawny Port
Method: ADD all ingredients into the mixing glass SHAKE vigorously and STRAIN into a pre chilled martini glass garnish and serve.
Origins: Inspired by the traditional “wine punch” Sangria typical in Spain and Portugal and always reliable Glenfiddich 15yr solera.
Comment: Whiskey & Sangria combine to make a strong, complex & sexy whiskey sour variation.
Matt will be in Hong Kong behind the bar soon!

Hey Guys,
Im long over due on bloggin.... so here it is! Summer is here so I've decided rather than hitting folks up with alcoholic beverages all the time here are some drinks for you guys to think about that will difinitely quench your thirst over Summer Virgin Ginger Mojito
Freshly smashed ginger balanced with pressed limes and mint. Charged with soda. Served tall over crushed ice.
Passion Quencher
Fresh mint and passion fruit lifted with fresh pineapple & fresh oranges. Served tall over crushed ice.
Grapefruit Smash
Garden basil lifted with juicy strawberries, fresh grapefruit and cranberry juice. Served tall over crushed ice.
Honey and Melon Smash
A blend of honeydew melon and fresh lychees topped up with cloudy apple juice. Served tall over crushed ice.
Strawberry and Peach Tale
Peach puree, freshly pressed strawberries and lemons charged with ginger ale. Served long.Pictures will be be posted shortly
