I thought to try different kind of Blueberry Pudding this time.So,I did.I don't eat much of desserts.But blueberry pudding is one of my favourite desserts.This pudding is dedicated to Sat dear,since I know she like blueberries.I hope you will like it Sat.
STEAMED BLUEBERRY PUDDING WITH VANILLA CUSTARD SAUCE
INGREDIENTS QUANTITY
1.BROWN SUGAR----------------------------------------------------------------------------- 600GMS
2.BUTTER ----------------------------------------------------------------------------------------- 225GMS
3.SALT ---------------------------------------------------------------------------------------------- 1/2TBSP
4.CINNAMON POWDER -------------------------------------------------------------------- 1TBS
5.WHITE FLOUR -------------------------------------------------------------------------------- 100GMS
6.BREAD CRUMBS(DRY)-------------------------------------------------------------------- 600GMS
7.EGGS -------------------------------------------------------------------------------------------- 6
8.BAKING POWDER ------------------------------------------------------------------------- 2TBSP
9.MILK --------------------------------------------------------------------------------------------- 21/2CUPS
10.BLUEBERRIES(FROZEN OR FRESH,WITHOUT SUGAR)--------------------- 500GMS
11.VANILLA ESSENCE --------------------------------------------------------------------- 3TSP
FOR VANILLA CUSTARD SAUCE:-
1.MILK ------------------------------------------------------------------------------------------------ 1CUP
2.EGGS ---------------------------------------------------------------------------------------------- 2
3.SUGAR -------------------------------------------------------------------------------------------- 1/2
4.CORNFLOUR ----------------------------------------------------------------------------------- 1TBSP
5.VANILLA ESSENCE ------------------------------------------------------------------------- 2TBSP
METHOD:-
1.Cream butter with sugar,salt and cinnamon powder.
2.Add the eggs one at time and blend it.
3.Sift the flour with baking powder and then mix it with bread crumbs.
4.Add the dry ingredients with the mixture of butter and sugar.Blend it well to give a smooth batter.
5.Fold in the blueberries.
6.Pour the mixture in a well greased big pudding mould or in individual small moulds.Cover it well with aluminum foil.
7.Steam it in a oven temperature 350F for 1 1/2 hours or till it's done.
8.When it's done let it set in the room temperature.Then turn it over serving plate.Serve this pudding with vanilla custard sauce.
FOR VANILLA CUSTARD SAUCE:-
1.Pour the milk in a sauce pan,add sugar and boil it.
2.when it's come to the boiling point remove it from the heat and add the beaten egg in it very slowly and keep on whisking it with other hand in the milk.
3.Bring back the sauce pan on the heat and stir it slowly when it's about to become little thick remove it from the heat again and add cornflour(mixed with little cold milk).Then again it bring back to the heat.Keep on stirring it till it's start boiling.
4.Let it become little cold in room temperature(cover it with a foil or plastic food wrap to avoid formation of layer on top) then add the vanilla essence in it.
*Note:-For steaming you need to put the mould in a pan then fill the pan with boiling water at the 1/4 level of the mould.If you don't have oven you can steam it on a cooking range.
